Labeled ingredients for church window cookies including butter, chocolate chips, pastel mini marshmallows, chopped walnuts, and shredded coconut.
  • Semi-Sweet Chocolate Chips: The foundation of our delicious chocolate coating. I opt for semi-sweet chocolate chips to strike a perfect balance, as the marshmallows and coconut contribute ample sweetness. Using milk chocolate might result in an overly sweet treat for some palates, but feel free to choose your preferred level of chocolatey indulgence. Dark chocolate chips could also be used for a richer, less sweet version.
  • Unsalted Butter: Crucial for achieving that smooth, melt-in-your-mouth texture in the chocolate mixture. Slicing the butter into smaller pieces will significantly speed up the melting process, ensuring an even consistency without scorching the chocolate. Always use unsalted butter to control the overall saltiness of your cookies.
  • Mini Marshmallows: The star of the “stained glass” effect! Using pastel mini marshmallows injects a delightful pop of color, truly bringing the vibrant window imagery to life. These colorful fruity marshmallows are often found at major supermarkets or online retailers. If pastel varieties are unavailable, standard white mini marshmallows will work just as well; your cookies will still be delicious, just with a more classic, less colorful interior.
  • Walnuts (Chopped): These provide a wonderful textural contrast and a nutty depth of flavor to the cookies. You can chop whole walnuts finely yourself using a sharp knife or a food processor, or simply purchase pre-chopped walnuts for convenience. For an even richer taste, lightly toast the walnuts before adding them to the mixture – this intensifies their natural flavor.
  • Sweetened Shredded Coconut: This ingredient forms the beautiful, snowy-white coating that envelops the chocolate logs. It adds a lovely chewy texture and a subtle sweetness that complements the chocolate and marshmallows. Ensure you use sweetened shredded coconut for the best flavor and adherence to the chocolate mixture.

Crafting Your Church Window Cookies: A Step-by-Step Guide

Follow these detailed steps, complete with helpful tips, to create perfect Church Window Cookies. For a fully printable version of this recipe, please consult the recipe card further down this page.

  1. Prepare the Chocolate Base: In a large, heavy-bottomed saucepan, combine your semi-sweet chocolate chips and sliced unsalted butter. Place the saucepan over very low heat. Begin to melt the chocolate and butter, stirring occasionally to ensure even melting and prevent scorching. Continue stirring until the mixture is completely smooth and free of any lumps. Patience is key here; avoid high heat, which can cause the chocolate to seize or burn.
  2. Allow to Cool Slightly: Once the chocolate and butter mixture is perfectly melted and smooth, immediately remove the saucepan from the heat. It’s crucial to let this chocolate base cool down just enough so that when you add the marshmallows, they don’t instantly melt into the mixture. A cooling period of approximately 4-5 minutes is usually sufficient. The chocolate should still be warm and fluid, but not hot enough to dissolve the marshmallows.
  3. Prepare Your Work Surface: While the chocolate mixture is cooling, lay out a few sheets of parchment paper on a clean countertop. This will be your rolling surface. Evenly sprinkle half of your sweetened shredded coconut down the centers of each piece of parchment paper, creating a bed for your cookie logs. Reserve the remaining coconut for the final coating. This proactive step helps streamline the assembly process.
  4. Combine Marshmallows and Walnuts: Once your chocolate mixture has cooled slightly, gently fold in the mini marshmallows and chopped walnuts. Stir with a rubber spatula until every piece of marshmallow and walnut is thoroughly coated in the rich chocolate. This ensures that each slice of your finished cookie will have that striking “stained glass” appearance.
  5. Form and Coat the Logs: Scoop the chocolate-marshmallow-walnut mixture onto the prepared coconut beds on your parchment paper. Divide the mixture evenly into 2 or 3 portions, depending on your desired log thickness. Carefully shape each portion into a log. Then, sprinkle the reserved shredded coconut generously over the tops and sides of each log.
  6. Roll and Chill: Using the parchment paper as an aid, carefully roll each mixture into a tight, compact log. The parchment paper will help press the coconut into the chocolate and create a uniform shape. Ensure the logs are sealed tightly. Transfer the rolled logs, still wrapped in parchment paper, to the refrigerator. Allow them to chill for a minimum of 2 hours, or ideally, overnight, to ensure they become firm enough for clean slicing. Overnight chilling guarantees the best results.
  7. Slice and Serve: When you’re ready to enjoy your beautiful stained glass cookies, remove the logs from the refrigerator. Unwrap them from the parchment paper. Using a sharp serrated knife, carefully cut the logs into ½-inch thick slices. The serrated blade will help cut through the marshmallows and nuts without squishing the log. Arrange on a platter and serve immediately.

Pro Tip for Perfect Slices:

To achieve impeccably clean slices that showcase the stunning “stained glass” effect, always use a very sharp serrated knife. For the neatest results, wipe the blade clean with a damp cloth or paper towel between each slice. This prevents chocolate residue from marring the vibrant colors of the marshmallows.

Storage and Preservation

Proper storage is key to maintaining the freshness and deliciousness of your Cathedral Window Cookies. These no-bake delights are wonderfully stable, making them great for making ahead.

Refrigerator: Once sliced or kept as whole logs, your Church Window Cookies will remain fresh and delicious for up to a week when stored in an airtight container in the refrigerator. Layer them with wax paper to prevent sticking if stacking multiple cookies. The cool temperature helps maintain their firm texture and prevents the chocolate from becoming too soft.

Freezer: For longer preservation, these cookies freeze beautifully. You can freeze individual sliced cookies by placing them in an airtight freezer bag or a freezer-safe container. To prevent them from freezing into one solid lump, place a piece of wax paper between layers. They can be stored in the freezer for up to 2-3 months.

Alternatively, you can freeze the entire log before slicing if you’re not quite ready to serve them. When you desire a church window cookie or two, simply transfer the log from the freezer to the refrigerator and allow it to thaw for a few hours until it’s firm but sliceable. Then, proceed with slicing and enjoying.

Expert Recipe Tips for Success

  • Adjusting Cookie Size: The recipe typically yields three logs, resulting in a specific size of cookie. If you prefer larger, more substantial cookies, simply divide the chocolate-marshmallow mixture into only two logs instead of three. This will create thicker logs and, consequently, bigger slices.
  • Gentle Chocolate Melting: Always melt your chocolate chips and butter over very low heat. High heat is the enemy of chocolate; it can cause it to seize (become grainy and stiff) or burn, rendering it unusable. A double boiler method is also an excellent option for controlled, gentle melting.
  • Cooling the Chocolate is Key: Once your chocolate and butter are perfectly melted and smooth, remember to remove the saucepan from the heat and allow the mixture to cool slightly before adding the colorful mini marshmallows. If you skip this crucial step and add marshmallows to very hot chocolate, they will melt instantly, losing their distinct shape and the desired “stained glass” effect. Aim for a warm but not hot chocolate base.
  • Parchment Paper is Your Friend: Don’t underestimate the power of parchment paper. It makes forming the logs incredibly easy and mess-free. It also assists in rolling a tight, uniform log and prevents sticking during chilling.
  • Experiment with Nut Textures: While chopped walnuts are traditional, consider how finely you chop your nuts. A coarser chop will provide more pronounced crunch, while a finer chop will blend more seamlessly into the chocolate matrix.

Delightful Serving Suggestions

Exciting Recipe Variations and Additions

One of the joys of making Church Window Cookies is their versatility! Feel free to get creative and customize them to your taste or for different occasions:

  • Explore Different Nuts: While walnuts are traditional, don’t hesitate to experiment with other types of nuts. Peanuts, cashews, almonds, or pecans would all lend their unique flavors and textures to this recipe. For a nut-free version, you can certainly omit the nuts entirely or replace them with toasted seeds like pumpkin or sunflower seeds for a similar crunch.
  • Get Creative with Coatings: The shredded coconut coating is classic, but there are countless ways to customize the exterior. Try rolling the logs in graham cracker crumbs for a s’mores-like twist, finely crushed shortbread cookies, rainbow sprinkles for a playful look, holiday-themed sprinkles, crushed peppermint candy for a refreshing zing, cocoa powder for an extra chocolatey kick, or powdered sugar for a delicate finish.
  • Vary the Chocolate: As mentioned, semi-sweet chocolate is a great starting point, but your preferences might lead you elsewhere. Feel free to use creamy milk chocolate chips for a sweeter, milder flavor, or opt for dark chocolate chips (60-70% cocoa) for a more intense, sophisticated chocolate experience. You could even use white chocolate chips for a completely different aesthetic and flavor profile, creating “white stained glass” cookies.
  • Add Flavor Extracts: Introduce a new dimension of flavor by stirring in a few drops of extracts to your melted chocolate mixture. Peppermint extract for a festive touch, almond extract to complement the nuts, or a hint of vanilla bean paste for added richness are all excellent choices.
  • Introduce Dried Fruits: For an extra chewy element and burst of flavor, try folding in finely chopped dried cranberries, cherries, or apricots along with the marshmallows and walnuts.
  • Seasonal Swaps: For specific holidays, consider using themed sprinkles or colored marshmallows (e.g., red and green for Christmas, orange and black for Halloween).

Ingredients

  • 2 cups semi-sweet chocolate chips
  • ½ cup unsalted butter, sliced
  • 10 ounces pastel mini marshmallows
  • ¾ cup chopped toasted walnuts
  • 2 cups sweetened shredded coconut

Instructions

  1. Melt chocolate chips and butter in a large saucepan over low heat, stirring frequently, until melted and smooth.
  2. Remove from heat and let cool slightly, just enough to not melt the marshmallows when they are added. 4-5 minutes should do it.
  3. While your chocolate is cooling, lay out 3 sheets of parchment paper and sprinkle half of the shredded coconut down their centers (reserving other half for later).
  4. Stir marshmallows and walnuts into the cooled melted chocolate until evenly coated.
  5. Divide the mixture evenly onto the center of each of the sheets of parchment paper, shaping it into a log. Sprinkle with the remaining shredded coconut.
  6. Use the parchment paper to roll each into a tight log.
  7. Refrigerate the logs for at least 2 hours (or overnight).
  8. Once set, remove the logs from the paper and slice into ½-inch pieces.

Notes

You can leave out the nuts or swap the walnuts for peanuts, cashews, or pecans if you prefer.

For larger cookies, divide into 2 logs rather than 3.

Store in an airtight container in the refrigerator for up to a week.
