Our journey to this incredible soup begins with succulent boneless, skinless chicken thighs, gently simmered directly in a flavorful chicken broth. This method ensures the chicken remains incredibly tender and infuses the broth with deep, natural chicken essence. Once cooked to perfection and easily shredded, the chicken is reunited with the broth, forming the foundation of our masterpiece. Next, we introduce the essential elements that define “crack chicken”: tender egg noodles for that quintessential soup experience, velvety cream cheese for an unparalleled creamy texture, sharp cheddar for a bold, cheesy punch, and a generous packet of dry ranch seasoning for that signature zesty, savory flavor. The grand finale involves a lavish sprinkle of perfectly crumbled bacon, adding a smoky, salty crunch, and vibrant green onions for a touch of freshness and color. The result is a soup that is undeniably rich, incredibly creamy, and profoundly satisfying, transcending the ordinary to become an extraordinary meal that the entire family will adore. Just like our popular hamburger noodle soup, this recipe is designed for maximum flavor with minimal fuss.

  • Irresistible Toppings for Texture & Taste: Elevating the soup from great to gourmet are the thoughtfully chosen toppings. Each bowl is generously adorned with crispy, smoky bacon crumbles, adding a delightful textural contrast and an extra layer of savory depth. A sprinkle of additional melted cheddar cheese enhances the creaminess and cheesy allure, while freshly chopped green onions provide a vibrant burst of color and a mild, fresh oniony finish. These toppings aren’t just for show; they complete the flavor profile and make each spoonful a perfect bite.
  • Convenient Shortcut for Busy Lifestyles: We understand that life can get hectic, which is why this recipe includes a fantastic shortcut option. Essential Ingredient Notes & Expert Substitutions

For precise measurements, the complete list of ingredients, and step-by-step instructions, please refer to the comprehensive printable recipe card located at the end of this post.

Crack chicken noodle soup ingredients including chicken broth, boneless skinless chicken thighs, egg noodles, cheddar, carrots, celery, green onion, thick cut bacon, onion, butter, flour, cream cheese, various seasonings, and a packet of Ranch seasoning.
  • Chicken Thighs: We opt for boneless and skinless chicken thighs for their incredible tenderness and rich flavor profile, which deepens the broth as they simmer. If you prefer, boneless, skinless chicken breasts can be used, though they may cook slightly faster and yield a slightly less rich texture. For a fantastic shortcut, 2½ cups of leftover cooked chicken or shredded rotisserie chicken can be added in Step 7, making this a quick and easy weeknight meal.
  • Egg Noodles: These classic noodles are indispensable for achieving that cozy, comforting chicken noodle soup feel. Their broad, flat shape holds the creamy broth beautifully. It’s crucial to cook them just until al dente – slightly firm to the bite – to prevent them from becoming mushy and falling apart in the soup as they continue to absorb liquid.
  • Ranch Seasoning Mix: This is the secret ingredient that truly defines the “crack chicken” flavor. Use a full 1-ounce packet of dry ranch seasoning mix (sometimes labeled ranch dressing mix). Avoid liquid ranch dressing as it will alter the consistency and flavor significantly. If you don’t have a packet, you can create a homemade version using a blend of dried dill, parsley, chives, garlic powder, onion powder, and a touch of salt and pepper.
  • Cream Cheese: For the ultimate creamy texture and rich flavor, always use full-fat cream cheese. Allow it to soften at room temperature for at least 30 minutes before adding it to the soup. This ensures it melts smoothly and incorporates seamlessly into the broth without forming lumps, contributing to the luxurious mouthfeel.
  • Sharp Cheddar Cheese: Freshly shredded sharp cheddar cheese is highly recommended over pre-bagged varieties. Freshly grated cheese melts much more smoothly and evenly, preventing a grainy texture, and offers a more pronounced, vibrant cheddar flavor that elevates the soup.
  • Bacon: Crispy, crumbled bacon is not merely a topping; it’s an essential flavor component. Cook thick-cut bacon until perfectly crisp, then crumble it generously over each serving. The smoky, salty crunch it adds is simply irresistible and complements the creamy soup wonderfully.
  • Carrots, Celery, and Onion (Mirepoix): This classic aromatic trio forms the savory foundation of countless soups and stews. Diced and sautéed, these vegetables contribute a natural sweetness and depth of flavor, building a robust base for our chicken noodle soup.
  • Green Onions: Used as a garnish, sliced green onions add a final touch of fresh, mild oniony flavor and a pop of vibrant color. They cut through the richness of the soup, offering a pleasant freshness with every bite.
  • Low-Sodium Chicken Broth: Using low-sodium broth allows you to control the overall saltiness of the soup, especially since ranch seasoning and bacon are already quite salty. You can always add more salt to taste later.
  • Butter & All-Purpose Flour: These are crucial for creating a smooth, rich roux that thickens the soup base, giving it a wonderfully creamy consistency. Butter also adds another layer of flavor and helps to brown the chicken beautifully.

Step 1: Prepare the Noodles

Begin by pouring the low-sodium chicken broth into a large, sturdy pot or Dutch oven. Bring the broth to a rolling boil over high heat. Once boiling, add the egg noodles and cook them according to the package directions, aiming for an al dente texture. This usually means they are firm to the bite but not hard. Overcooked noodles will become mushy in the soup. Once cooked, use a pasta spoon or slotted spoon to carefully remove the noodles from the broth, transferring them to a separate bowl. Set them aside for later, and immediately cover the pot of broth, reducing the heat to a low simmer to keep it warm.

Step 2: Sear the Chicken for Flavor

In a large skillet, melt 1 tablespoon of butter over medium heat. Once the butter is shimmering, add your boneless, skinless chicken thighs. Season the chicken generously with garlic powder and half of the packet of ranch seasoning mix (be sure to reserve the other half for a later step). Sear the chicken on both sides for approximately 2-3 minutes per side, until beautifully browned. This searing step is crucial as it locks in moisture and develops a rich, savory crust, enhancing the overall flavor of your soup. After searing, carefully transfer the chicken thighs to the pot of simmering broth. Cover the pot, bring the broth back to a boil, then reduce the heat to a low simmer.

Step 3: Cook Bacon and Sauté Onions

While the chicken is simmering in the broth, return to the same skillet where you seared the chicken. Cook the bacon slices until they are wonderfully crisp. Once cooked, transfer the bacon to a plate lined with paper towels to drain excess fat and cool. Once cooled, crumble the bacon and set it aside for garnishing. Next, add the diced onion to the skillet, utilizing the flavorful bacon drippings to sauté. If there isn’t enough bacon grease, add a small pat of butter. Sauté the onions, stirring frequently, until they become soft and translucent, which typically takes about 4-5 minutes. Remove the skillet from the heat.

Step 4: Simmer the Vegetables

After the chicken has simmered in the broth for about 20-25 minutes, it’s time to add the aromatic vegetables. Carefully add the sautéed onions, sliced carrots, and sliced celery to the pot with the chicken and broth. Recover the pot and allow everything to simmer together for an additional 10 minutes. This allows the vegetables to soften and release their flavors into the broth, further enriching the soup base.

Step 5: Shred the Chicken

Once the chicken thighs are thoroughly cooked (they should be tender and easily shredded with two forks), carefully remove them from the pot. Place the cooked chicken on a clean cutting board or in a shallow bowl. Using two forks, shred the chicken into bite-sized pieces. Once shredded, return all of the tender chicken back into the pot with the simmering broth and vegetables. This ensures the chicken is perfectly integrated into the soup.

Step 6: Create the Creamy Base

In a separate clean skillet, melt the remaining 2 tablespoons of butter over medium heat. Once melted and slightly bubbly, stir in the all-purpose flour. Cook this mixture, stirring constantly, for 1-2 minutes to create a roux. This step cooks out the raw flour taste. Gradually whisk in about ½ cup of the hot chicken broth from the main pot into the roux. Then, add the softened cream cheese. As the cream cheese begins to melt, continue whisking vigorously until the mixture is completely smooth and free of any lumps. Slowly whisk in another ½ to 1 cup of broth, continuing to whisk until you achieve a wonderfully smooth, creamy soup base. This creamy mixture will be the heart of your crack chicken soup’s luscious texture.

Step 7: Combine and Season

Carefully pour the creamy soup base you just created into the large pot with the chicken, broth, and vegetables. Stir everything thoroughly to ensure the creamy base is well incorporated throughout the soup. Now, add the reserved half packet of ranch seasoning mix and ¾ of the shredded sharp cheddar cheese. Stir gently until the cheese has completely melted and the soup is beautifully combined. Taste the soup and season with salt and freshly ground black pepper as needed. Remember that the ranch seasoning already contains salt, so add sparingly and adjust to your preference. Finally, return the cooked egg noodles to the pot, stirring them in gently.

Step 8: Garnish and Enjoy

Your magnificent Crack Chicken Noodle Soup is now ready to be served! Ladle generous portions into bowls. For the perfect finishing touch, garnish each bowl with a sprinkle of the crispy crumbled bacon, additional shredded sharp cheddar cheese (for extra melty goodness), and freshly sliced green onions. Serve immediately and savor the rich, creamy, and undeniably flavorful experience. This soup is best enjoyed hot, making it the perfect comforting meal for any occasion.

To perfectly complement this hearty and creamy soup, we highly recommend serving it alongside these incredibly simple and delicious 2-ingredient biscuits. They are a breeze to make and boast an unbelievably fluffy and tender texture, ideal for soaking up every last drop of the rich broth. Alternatively, a crusty loaf of bread, a light garden salad, or even some simple garlic bread would make wonderful accompaniments.

Time-Saving Shortcut Option

For those bustling days when you crave comfort without the extensive prep, our shortcut option is your best friend. Instead of searing and simmering raw chicken thighs, simply use 2½ cups of pre-cooked, shredded chicken. This could be leftover roasted chicken, or even better, a store-bought rotisserie chicken. Add the shredded chicken directly to the soup in Step 7, along with the noodles, remaining ranch seasoning, and cheddar cheese. This simple swap shaves off a significant amount of cooking time, allowing you to enjoy this flavorful soup even on your busiest weeknights without sacrificing any of the delicious “crack chicken” goodness.

Storage and Reheating Best Practices

Proper storage and reheating are key to enjoying your Crack Chicken Noodle Soup long after it’s initially prepared, ensuring its deliciousness and creamy texture are maintained. Here’s how to best preserve your leftovers:

Refrigerator Storage: Any leftover soup should be transferred to an airtight container and stored in the refrigerator. It will remain fresh and delicious for up to 4 days. Always ensure the soup has cooled down completely before sealing and refrigerating to prevent condensation and bacterial growth.

Freezer Storage: This soup can be successfully frozen for up to 2 months. However, for the absolute best results, we recommend freezing the soup without the egg noodles. Noodles tend to become mushy and absorb too much liquid when frozen and reheated. Instead, when you’re ready to enjoy, prepare a fresh batch of noodles and add them to the reheated soup. As this is a creamy, dairy-based soup, some slight separation may occur during the freezing and thawing process. Don’t worry, this is normal! A good whisking during reheating will help bring the soup back to its smooth consistency.

Reheating Instructions: To reheat, gently warm the soup on the stove over medium-low heat or in the microwave. If the soup appears too thick or has separated slightly, add a splash of extra chicken broth, milk, or water. Whisk continuously as it heats to loosen the soup and restore its creamy, harmonious texture. Bring it to a gentle simmer, not a vigorous boil, to prevent the dairy from curdling.

Pro Tips for the Best Crack Chicken Noodle Soup

Achieving the perfect Crack Chicken Noodle Soup is easy with these expert tips:

  • Don’t Skip Searing the Chicken: While it might seem like an extra step, searing the chicken thighs before simmering them adds an incredible depth of flavor to both the chicken and the overall broth. The browned exterior creates a richer taste that permeates the entire soup, making a noticeable difference in the final dish.
  • Ensure Cream Cheese is Softened: For a flawlessly smooth and creamy texture, it’s essential to use cream cheese that has been softened to room temperature. Cold cream cheese will be difficult to whisk smoothly into the broth and is more likely to create lumps, detracting from the luxurious consistency of the soup.
  • Grate Your Own Sharp Cheddar: Pre-shredded cheeses often contain anti-caking agents that can prevent them from melting smoothly, resulting in a grainy texture. Freshly shredded sharp cheddar, on the other hand, melts beautifully and imparts a far superior, more authentic cheddar flavor. It’s a small effort that yields significant results.
  • Add Toppings Just Before Serving: To maintain their optimal texture and vibrant freshness, always add crispy bacon, extra shredded cheese, and green onions as a garnish right before serving each bowl. This ensures the bacon remains crunchy, the cheese is perfectly melted and gooey, and the green onions offer a crisp, fresh bite.
  • Taste and Adjust Seasoning: Always taste your soup before serving and adjust the seasoning as needed. The saltiness can vary depending on your chicken broth and ranch seasoning mix. Add salt and pepper incrementally until the flavors are perfectly balanced to your liking.
  • Avoid Overcooking the Noodles: Cook the egg noodles only until al dente, as they will continue to soften and absorb liquid in the hot soup. Overcooked noodles can become mushy, compromising the texture of your soup.

Exciting Additions and Creative Variations

While our classic Crack Chicken Noodle Soup is perfect as is, it also serves as an excellent canvas for customization. Feel free to get creative with these additions and variations to suit your taste and dietary needs:

  • The Ultimate Shortcut: As mentioned, save time by swapping the raw chicken thighs for 2½ cups of cooked, shredded chicken (like rotisserie chicken or leftovers). Add it directly in Step 7 for a speedy weeknight meal.
  • Go Gluten-Free: Easily adapt this recipe by using your favorite gluten-free egg noodles. For the creamy base, substitute the all-purpose flour with an equal amount of cornstarch (mixed with a little cold water to create a slurry before adding) or a gluten-free flour blend for thickening.
  • Boost with Extra Vegetables: Enhance the nutritional value and texture by incorporating additional vegetables. Frozen peas, corn, or even a handful of finely chopped kale or spinach can be stirred in during the last few minutes of simmering, adding color and freshness.
  • No Ranch Seasoning? No Problem! If you don’t have ranch seasoning on hand, you can still achieve a similar savory flavor profile. Simply increase the garlic powder to 2 teaspoons and consider adding a pinch of dried dill, dried parsley, and onion powder to mimic those classic ranch notes.
  • Spice It Up: For those who enjoy a little heat, add a pinch of red pepper flakes or a dash of hot sauce to the broth. Diced jalapeños can also be sautéed with the onions for a fresh, spicy kick.
  • Cheese Lover’s Dream: Experiment with different cheeses! While sharp cheddar is classic, Monterey Jack, Colby, or a blend of Mexican cheeses could offer a different, equally delicious cheesy dimension.
  • Herbaceous Twist: Fresh herbs always elevate a soup. Stir in some fresh chopped parsley or chives at the very end for an extra layer of bright, aromatic flavor.

  • 8 cups low sodium chicken broth, (64 oz)
  • 2 ½ cups egg noodles
  • 3 Tablespoons butter, divided
  • 1.5 – 2 lbs boneless skinless chicken thighs
  • 1 packet ranch seasoning mix, (1 oz), divided
  • ½ teaspoon garlic powder
  • 4 slices bacon
  • 1 cup diced onion, about 1 small onion
  • 1 ½ cups sliced carrots, about 4-5 carrots
  • 1 cup sliced celery, about 3 stalks
  • 2 Tablespoons all-purpose flour
  • 8 oz cream cheese
  • 8 oz sharp cheddar cheese, shredded
  • salt and pepper, to taste
  • 4 green onions, sliced

Instructions

  • Add chicken broth to a large pot or Dutch oven and bring to a boil. Add noodles and cook until al dente according to package instructions. Using a pasta spoon, remove noodles and set aside. Keep the broth covered and on a low simmer.
  • In a large skillet over medium heat, melt 1 Tbsp butter. Add chicken thighs and season with garlic powder and half the packet of ranch mix (reserving the rest). Brown chicken on both sides, about 2-3 minutes per side. Transfer chicken to the pot of simmering broth and cover. Return to a boil, then reduce heat to a low simmer.
  • While chicken is cooking, cook bacon in the skillet. Once cooked, set aside on a paper-towel lined plate. Add onion to the skillet and sauté in the bacon grease (add butter if not enough bacon grease), stirring often, until translucent – about 4-5 minutes. Remove from heat.
  • Once chicken cooked for 20-25 minutes, add the onions, carrots, and celery. Recover and allow to simmer for an additional 10 minutes.
  • Once the chicken has cooked through, remove, shred, and return to the pot.
  • In a clean skillet over medium heat, melt 2 Tbsp of butter. Stir in flour and cook for 1-2 minutes. Add ½ cup of broth (from the pot) and cream cheese. As the cream cheese melts, whisk to remove lumps. Gradually whisk in another ½-1 cup of broth, whisking until smooth. Then add your creamy soup base to the pot and stir to combine.
  • Return the noodles to the pot along with the remaining ranch seasoning and ¾ of the cheddar cheese. Add salt and pepper, to taste (you may not need any salt, depending on salt content of the ranch mix). Stir to combine.
  • Serve soup topped with crumbled bacon, shredded cheese, and green onion.

Notes

Shortcut: Use 2½ cups shredded rotisserie or leftover chicken and skip the simmering step.

Storage: Refrigerate leftovers in an airtight container for up to 4 days. Reheat on the stove or in the microwave with a splash of broth or water to loosen.
