- ½ cup unsalted butter, room temperature

- ⅓ cup light brown sugar

Instructions
- Line the bottom and halfway up the sides of your slow cooker with parchment paper, ensuring enough overhang to easily lift the cookie out later.
- In a large bowl, using an electric hand or stand mixer, beat the softened butter, granulated sugar, and light brown sugar until the mixture is light and fluffy.
- Mix in the room temperature egg and vanilla extract until just combined.
- In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently stir in the semi-sweet chocolate chips, distributing them evenly throughout the cookie dough.
- Transfer the cookie dough to the prepared slow cooker basin. Press it down into an even layer using your hands or a spatula. Optionally, sprinkle a few extra chocolate chips on top for a delightful appearance.
- Cover the slow cooker and cook on the low setting for 3-4 hours, or until the center is set and the edges are lightly browned. The exact time may vary by slow cooker.
- Using the parchment paper overhang, carefully lift the cooked cookie out of the crockpot and transfer it to a cooling rack. Allow it to cool slightly before slicing and serving warm with your favorite ice cream, or cool completely to slice into neat bars for storing.
